Italian Cream Cake
Italian Cream Cake is a classic Southern-style layer cake made with buttermilk, coconut and pecans, finished with a generous cream cheese frosting. Despite the name, it isn’t generally considered a traditional Italian dessert; its history is much more closely associated with American Southern baking.
What makes the cake memorable is the contrast of textures and flavors: tender buttermilk cake, chewy coconut, toasted pecans and tangy cream cheese frosting. Whipped egg whites are folded into the batter before baking, keeping the layers lighter than you might expect from such a rich cake.
It’s an excellent choice for birthdays, holidays or any occasion that calls for a proper celebration cake.
